It has all the benefits of cast iron but with a surface that can’t be scratched off, will never chip and creates a non-stick surface It may just be the lightest iron skillet you’ll find. It may be just a little different from what you are used to, though.Daily usage: Unlike conventional seasoned cast iron cookware, this skillet can be scoured. Its non-stick properties are from nitrogen infused into the iron, not seasoning that only lies on the surface. So, scour to your heart’s content! Hand washing is best. Washing in a dishwasher may cause rust stains. Rust stains can be removed by seasoning the pan.Seasoning: Seasoning is not needed, unlike other cast iron cookware. However, the non-stick properties of the pan can be slightly improved if you season it. If the pan rusts, seasoning it will remove the rust. Detailed instructions for this are included with the pan. In nutshell, you can season it by frying a batch of bacon or coating the pan with cooking oil and heating it in your oven. If you season it, keep in mind that scouring will remove the seasoning.To remove cooked-on food: Pour enough water into the skillet to cover the cooked-on residue. Bring the water to a rolling boil.
